Sour and Spicy Potato Strings: The Real Way to Make Them

Sour and spicy potato strings are a favorite home-cooked dish for many people. But how to make it as sour, spicy and crispy as in restaurants? Today I'll share my method. First, cut the potato strings into thin slices. You can also use tools to complete this. This way, the slices are evenly thick and thin, then cut them into strands with a knife.




Try not to use a grater. Handmade potato strings can make the best texture. After cutting the potato strings, add them to soak, wash off the surface starch until the water is clear and the strands are white. White vinegar can make the potato strings more crispy. Soak dried chili peppers for 15 minutes, then slice them with a knife. Soaked dried chili peppers don't get burnt and have bright red color.



Green bell pepper strings as a side dish, in a pot, add oil to heat until 50% hot, add chopped scallions to stir-fry, then add a few un-spiced chili peppers and star anise, stir-fry until fragrant, then pour in the potato strings, stir-fry over high heat for 20 seconds. High heat and quick stir-frying are key to this dish, then add the green bell pepper strings, add a little red oil for fragrance, and finally add a little vinegar on the side of the pot.
