How to Make Rou Jia Mo (Meat Sandwich) at Home?
350g flour, 2g yeast, 1g baking soda, adjust with 150ml warm water to form a dough and ferment for 1 hour
Divide into 6 small dough balls and roll into oval shapes, as shown in the figure
Roll them up
Flatten them

Roll out into round pancakes
Place in a non-oiled skillet and sear for 20 seconds on both sides, as shown in the figure
Place in an oven at 175°C for 15 minutes

Boil pork with 150ml water, add green peppers, scallions, ginger, star anise, cinnamon, cloves, bay leaf, nutmeg, black pepper, thirteen spices,, sugar, aged soy sauce, salt over low heat for 2 hours! Reserve the sauce for soaking and marinating overnight

Tips
1. Adjust the baking time according to your preferred texture. If you want a crispier texture, increase the baking time
2. Do not add too much baking soda, or the pancakes will turn yellow
3. I made a double batch of pork once, feel free to add eggs or tofu when braising pork to make braised eggs or braised bean rolls
