▶Soft Matcha Sponge

Eggs: 125g Sugar: 85g Honey: 10g

Vanilla Extract: 2g Butter: 25g Milk: 40g

Low Powder: 75g Matcha Powder: 10g

▶Cheese Cream Filling

Heavy Cream: 200g Sugar: 20g

Cream Cheese: 170g Sweetened Condensed Milk: 20g

Strawberries: As needed

Mold size: 15cm x 7cm

1. Soft Matcha Sponge



▲Eggs, sugar, vanilla extract, and honey (or use honey substitute like corn syrup or maple syrup) pour into a mixing bowl, and place the mixing bowl on a water bath, while heating, stir the ingredients until the liquid reaches 41°C. Whisk whole eggs, this temperature is the easiest and most successful, you can also follow your own recipe.


▲After heating and whisking the egg mixture, remove the hot water and then place the bowl containing milk and butter in the hot water for later use.


▲Immediately whisk the egg mixture, as long as the egg white can be pulled up and formed obvious streaks, and won't disappear quickly.


▲Next sift in low powder and matcha powder, use the folding method to mix evenly.

2. Cheese Cream Filling


▲Beat cream with sugar until 40%, adding heavy cream, then add cream cheese, then add sweetened condensed milk, if there is no sweetened condensed milk, replace it with 10-20g sugar, because cheese is relatively sour.Because this cake doesn’t need frosting and doesn’t need gelatin, the cream cheese doesn’t need to be tempered in warm water!



▲Continue to beat until the cream cheese and cream are perfectly fused, the streaks are clear and upright, and the texture is smooth and creamy. Fill a piping bag with it.

3. Cake Combination


▲Cut a 6-inch high ring (7CM high) and trim the cake layer, surround the cut strawberry slices around the mousse ring;
