Crispy Fried Milk, No Special Ingredients, Homemade Without Pressure
Today, Mr. Wen brings a family-friendly delicacy – crispy fried milk.
This crispy fried milk features a golden-yellow color, a crispy outer layer, rich milk flavor, and is suitable for a wide range of ages and is nutritious.

Here's the ingredient list:
Milk 500g.
Condensed Milk 15g.
Honey 15g.
Sugar 10g.
Starch 35g.
Then prepare an egg. Breadcrumbs. Dry starch for surface decoration. If you don't have condensed milk and honey, you can replace them with 15g of sugar, totaling 25g of sugar. If you find it not sweet enough, you can add more sugar.

Mix the milk, starch, sugar, and condensed milk until well combined. If you don't have milk, you can use coconut milk or other flavored beverages.
Heat over low heat until it reaches a viscous state. If you prefer a firmer texture, add more starch. If you prefer a softer texture, reduce the starch accordingly.

Place the cooked slurry in a container and seal it. Refrigerate it until it solidifies.

Cut it into your desired size blocks.
Beat the egg and coat the blocks with it.

Then roll them in starch – this is how the crispy exterior is created. If you skip this step, you won't get that crispy texture.

Coat again with egg,

Then coat with breadcrumbs.
After everything is done, heat the oil to 60% hot and carefully drop in the breaded milk until the surface is golden brown and crispy. Remove it from the oil.

Plate and serve – a crispy and tender crispy fried milk is ready.
Production tips:
- When mixing the ingredients, make sure they are thoroughly mixed and combined, without any granules. Sugar should be completely dissolved.
- During cooking, ensure even heating. Don't let it burn. The cooking time must be sufficient, otherwise, the viscosity will be affected, and the starch won't fully hydrate, resulting in hard clumps.
- When applying the slurry, ensure even coating. Otherwise, the crispy texture won't form, and the color won't be attractive.
- During frying, make sure it doesn't sink to the bottom, as the bottom edges are prone to discoloration and burning.
