Fresh Mushroom Milk Cod Soup
Ingredients:
Codfish---2 pieces; Seasonal Fresh Mushrooms--- 750g; Ginger slices---As needed; Green onion segments---As needed; White pepper---5g
Salt---5g
Instructions:
① Heat the pot, pour in oil, and heat until 90% hot. Then add the codfish (codfish should be dried with kitchen paper beforehand) and sear.
② When searing, don't flip quickly. Use a spatula to gently push, if the codfish moves with the spatula, it means it's ready to flip. Flip and sear again, adding ginger slices and frying for 2 minutes
③ Add all mushrooms, pour in boiling water, add half white pepper, cover the pot and boil for 15 minutes
④ After 15 minutes, add the remaining white pepper and salt and stir until out of the pot
Tips:
- Please ask the shopkeeper to handle the codfish cleanly, and when you bring it home, you still need to carefully remove the black membrane inside the belly, this thing is not removed, there will be a fishy smell.
- When searing the fish, you must heat the empty pot to a very hot temperature before adding oil. After the oil is hot, add the fish to sear, this can achieve biological anti-sticking, and the fish skin is not easy to break.
- Add the remaining white pepper last because white pepper will lose its aroma if cooked for too long. Add a portion first to dispel the fishy smell, and add the remaining portion to enhance the fragrance.
