3Add ten grams of sugar, milk, and corn oil to the egg yolk mixture, and stir until well combined.




4Sift in the flour and cocoa powder, absolutely sift it, otherwise small clumps will be mixed in, which will not be easy to stir open.



5Whip the egg whites, which is very important! Low-speed whip until a large bubble is formed, then add one-third of the remaining 90 grams of sugar. High-speed whip until the bubbles are fine, then add another one-third. Continue high-speed whipping until the bubbles are dense, then add the remaining one-third, continue whipping until the egg whites have obvious texture, and the whisk can form a stable small hook when lifted.



6Take one-third of the egg white mixture and mix it into the egg yolk mixture, and fold it in gently! It's important not to stir when folding, after folding it in gently, then combine the remaining egg whites, and fold it in gently! Fold, fold, fold – three times is important!




7Pour into the pre-prepared mold, pour it down 20 centimeters, pour it down to help eliminate bubbles. Then shake the mold three times to remove the bubbles inside. Preheat the oven for 5 minutes at 150°C (300°F) with top and bottom heat. Bake for 55 minutes.
