French Onion Soup

French onion soup is mainly about savoring the sweetness of onions, so caramelizing the onions to a golden brown is a key step. Traditionally, the soup uses Gruyère cheese or Emmentaler cheese, both Swiss cheeses. However, for convenience at home, Huo Ge uses pizza cheese shreds as a substitute.


Ingredients: baguette slices, cheese, flour, olive oil.
Spices: onion, garlic, bay leaf, basil.
Seasonings: brandy (wine), salt, white pepper, broth (preferably beef broth).

Instructions:
1. Slice the onions, mash the garlic into a paste (if using other cheeses, also slice into shreds).
2. Heat the pot, pour in olive oil.

3. Cook the onions over low heat until they turn golden brown.


4. Gradually add the garlic paste and cook until you can no longer see the garlic.

5. Add flour and cook until you can no longer see the flour particles.

6. Pour in brandy, broth, and bay leaf and bring to a boil.


7. Add salt and white pepper and simmer for 20 minutes or more.


8. Remove the bay leaf and ladle into oven-safe bowls.


9. Place the baguette slices on top, sprinkle with cheese shreds, and bake in the oven at 180 degrees for about 10 minutes (bake until the cheese is melted and slightly browned on the surface of the soup).

10. Sprinkle with basil.
