Sour Chili Braised Chicken with Turmeric Roots
Main Ingredients:
1000g Free-Range Chicken, 400g Sour Chili Peppers, 4 cloves Garlic, 15g Ginger, 20g Sichuan Peppercorns
Seasonings:
10g Oyster Sauce, 15ml Flavor Essence, 5g Chicken Powder, 8g Salt, 10g Tea Oil, 800g Peanut Oil
Instructions:
1. Cut the chicken into 4cm wide and 3cm long pieces.
2. Chop green onion into green onion segments; cut Sichuan peppercorns into small segments; slice ginger; mince garlic.
3. Heat a wok, add peanut oil and heat to 50% hot, add chicken pieces and stir-fry.
4. Add ginger, garlic, Sichuan peppercorns and stir-fry for a few times, add sour chili peppers and stir-fry.
5. Pour in broth and braise for 10 minutes, add oyster sauce, then pour in tea oil, plate, sprinkle green onion, and serve.
