Delicacies: Goose Neck
This food is a deep-fried dish, with both meat and vegetarian options. Although it's called 'goose neck,' it contains no goose meat; lamb or beef is minced (or ground) into a fine powder, scallions are chopped into a fine paste, ginger is peeled and cut into a fine powder, flour is mixed with water to form a paste. Soy sauce, fragrant oil, and salt are added and stirred to create the filling. It is wrapped in tofu skin and then cut into the shape shown in the picture, and finally deep-fried.
