Many people boil the water completely before adding the noodles, which is a big mistake. 1. Don't add boiling water to the noodles.
Many people add boiling water, which is a wrong approach. It easily causes the noodles to clump together and lose their chewiness. The best time to add the noodles is when the water is just starting to bubble.Adding boiling water can cause the outside of the noodles to cook first, while the inside remains undercooked, resulting in undercooked noodles.
2. Add cold water when the water is about to boil over.
During the noodle-making process, if the water is about to boil over, many people immediately turn down the heat, which is also a mistake. This makes the noodle soup cloudy and the noodles sticky. Instead, we just add a bowl of cold water, and the noodles won't stick, and the texture will be chewy, and it may also avoid excessive intake of alkaline substances, which can affect health.

3. Add a few drops of oil before adding the noodles.
When making noodles, if they're too dry and clumpy, and outside noodles are chewy, the difference between them is oil. Add a few drops of edible oil to the water, so the noodles are clearly separated. Adding oil can also prevent the noodles from boiling over during the cooking process.

4. Add edible salt.
Before adding the noodles to the pot, add some edible salt and stir until dissolved before adding them. This prevents the noodles from sticking together. Edible salt forms electrolytes in the water, preventing noodles from sticking.
5. Don't let the hot water get too cold.
