Vermicelli Noodles with Fish (Powdered Kelp Noodles)
Meat gets greasy, but fish doesn't. Today I bought a 2-jin (approximately 0.9kg) fish, and I stewed it with vermicelli noodles. The broth is rich and flavorful, the fish meat is tender, and the vermicelli noodles are chewy and elastic.

Today I made vermicelli noodles with fish, and I also added a handful of purple waxflower (). Purple waxflower is a Chinese medicinal herb and also a spice.
Many elderly people like to grow several purple waxflower plants in their courtyards. If you accidentally catch a cold or suffer from wind-cold, you can brew tea with a few purple waxflower leaves, which is said to dispel the cold.
Ingredients: 1 large carp (1100g), 1 bundle of vermicelli noodles, 1 tomato.
Seasonings: Oil, salt, sugar, rice wine, dark soy sauce, MSG, chili sauce, ginger, scallion (green onion), garlic, purple waxflower, star anise (), white pepper (), chicken broth ().

Instructions: 1. Clean and fillet the carp, remove the belly and gills, wash it thoroughly and drain it, cut several knives across the fish's back to break the bones, but don’t cut the fish belly, making it easier to bend the fish over, (soak the vermicelli noodles in warm water for a while).

2. Prepare scallions, ginger, garlic, star anise (), purple waxflower, etc. seasonings.
3. Heat oil in a pot, sauté scallions, ginger, and garlic until fragrant, then add 2 tablespoons of chili sauce and sauté to release its aroma.

4. Add the tomatoes and sauté until they wilt.

5. Pour in 1 bowl of water, add some sugar, dark soy sauce, MSG, and bring to a boil.

6. In a separate pot, place star anise () and purple waxflower at the bottom, then place the carp in.

7. Pour the tomato seasoning into the broth.

8. Bring to a boil over high heat for 10 minutes.
9. Add the vermicelli noodles and bring to a boil, then simmer over low heat until the vermicelli noodles are tender.

10. Add some salt and white pepper, and chicken broth, then simmer over high heat to thicken the broth, making it particularly delicious.

11. Sprinkle with chopped scallions and serve.

The vermicelli noodles have absorbed the flavor of the fish, even babies don’t find it spicy, and they eat several mouthfuls.

Tips: When making this fish, add 1 tomato, the taste will be much better, and you don’t need to fry the fish, first cook the seasonings to release their aroma, and then cook them together with the fish, add the vermicelli noodles, the vermicelli noodles have absorbed the flavor of the fish, and it’s also very delicious.
