How to Make Shrimp Pancake
Jianxianbing (Shrimp Pancake) is a traditional famous dish from Dongjing (present-day Kaifeng), Henan Province, during the Northern Song Dynasty, belonging to Henan cuisine.

Cooking Materials
Main Ingredients: Shrimp meat 200g.
Auxiliary Ingredients: Eggs 50g, Cornstarch (Adzuki Bean Starch) 25g.
Seasonings: Green Onion 5g, Ginger 5g, Sichuan Peppercorns 3g, Salt 1g, White Pepper 3g, Flavor Enhancer 3g, Rendered Lard 30g, Rice Wine 15g.

Cooking Process
1Wash and drain the shrimp meat, then marinate with salt, flavor enhancer, and rice wine. Also, chop green onion and ginger into shreds;
2Mix eggs and wet cornstarch to form an egg slurry;
3Transfer the marinated shrimp meat into the egg slurry and mix well;
4Heat the wok over medium heat, add rendered lard, and heat until three-quarters full. Then, spread the mixed shrimp meat into circular patties and pan-fry over medium heat until they turn slightly yellowish, then flip and fry until they are translucent yellow;
5Mix chopped green onion, ginger, and Sichuan peppercorns, and sprinkle over the shrimp pancakes to release fragrance;
6Drain off any remaining oil. Arrange the shrimp pancakes in a dish and use a spoon to create gold coin patterns on the shrimp pancakes, and serve with white pepper.
Cooking Tips
1. Pan-frying is a method of cooking with low heat and minimal oil, aiming to sear the main ingredient and cook it through. It differs from deep-frying, resulting in a crispy and tender texture instead of a burnt and brittle one;
2. Because of the pan-frying process, prepare 200g of rendered lard.
