1Sour and Spicy Green Beans with Pork

Production Method
1Cut the pork head into meat, put it in a bowl, add salt, Shao Xing Wine, Light Soy Sauce, and Cornstarch to mix evenly and marinate for a while;
2Cut the sour and spicy green beans into dicing and prepare, chop green onion, garlic and Sichuan peppercorns
3Heat oil in a pot, pour in the marinated pork and stir-fry, add Old Label to enhance the color, and cook out the lean meat;
4Reheat oil in the pot, add green onion, garlic and Sichuan peppercorns to stir-fry until fragrant, then add sour and spicy green beans and stir-fry continuously; after the sour and spicy green beans are cooked, add the stir-fried pork shreds and stir-fry for a few times before taking out.
2Duck Blood and Chili Pork
Ingredients: One piece of pork ribs, 60g Chili, 25g Fermented Black Beans, Ginger, Green Onion, Garlic, Light Soy Sauce, Salt, Shao Xing Wine, 1 spoon of Liquor
Procedure
1Cut the pork ribs into small segments, use water to soak, use hand to grab and wash several times, wash off the blood water, then dryly drain and put it into a bowl. Ginger cut into filaments, garlic minced, green onion chopped into small pieces; Fermented black beans soaked in water; Chili chopped into shreds;
2Wash the ribs and mix with salt, Light Soy Sauce, a little cornstarch and Shao Xing Wine, marinate for 15 minutes;
3Then spread chopped chili shreds, fermented black beans and ginger, garlic together.
4Pour in Light Soy Sauce, Shao Xing Wine, Chicken Essence to fry fragrant and spread on the ribs sprinkled with fermented black beans. Then put it into a steaming pot, steam over high heat for 20-30 minutes and take it out, sprinkle with green onion for a delicious meal.
3Spicy Chili with Pork Ribs and Green Peppers
Ingredients: 150g Pork Ribs, 50g Green Peppers, 3 pieces of Tofu, Garlic, Broth, Fermented Black Beans, Oil, Soy Sauce, Shao Xing Wine, Salt, each appropriate amount
Procedure:
1Use water to soak the Pork Ribs for 1 hour, steam the pork ribs to cook, cool down, and cut into thin slices. Green Peppers clean and cut into segments diagonally. Heat oil in a pot to 40% hot, put tofu into it to fry until the skin is hard, take out and cool, cut into strips.
2Pour oil into pot to 60% hot, sauté Green Peppers, Fermented Black Beans, Garlic until fragrant, add tofu, pork ribs and stir-fry evenly, add Soy Sauce, Shao Xing Wine, Salt to season.
3Pour in Broth, stir-fry with high heat for 1 minute, pour out and plate.

4 (Mapo Tofu)
IngredientsPork (or Beef), Tofu, Sichuan Peppercorns, Pixian Doubanjiang (fermented broad bean paste), Cornstarch, Green Onion, Garlic, Shao Xing Wine, Light Soy Sauce
Production Method
1Cut tofu into blocks and put it in hot water for a while to remove the bean flavor; Cut the pork or beef into meat and mince it, and cut the green onion and garlic into minced garlic for preparation;
2Heat oil (you can use a little more oil) in a pot, pour in the minced meat and stir-fry over low heat, add Shao Xing Wine and Light Soy Sauce, wait for the minced meat to become slightly yellowish, then add a spoonful of Pixian Doubanjiang and stir-fry out the red oil;
3Pour in minced garlic to continue stir-frying to release the aroma, add a certain amount of water (water can cover the tofu) and cut tofu into high heat to boil; when the broth in the pot is almost cooked, add cornstarch to thicken, take out and after the pot is out, sprinkle with Sichuan peppercorns and green onion.
