Sour and spicy noodles:

Sweet potato noodles 1 bundle

Peanuts appropriate amount

Green onions 2-3 stalks

Cilantro 1 stalk

Garlic cloves 2

Dried chilies 6

Bird's eye chili 1

Vinegar 2 spoonfuls

Soy sauce 1 spoonful

White pepper a little

(Dried chilies can be replaced with chili powder or chili oil)


1Soak the sweet potato noodles for 1 hour.

2Wash and dry the peanuts, put 1 spoonful of oil in a pot and heat over the smallest fire,Stir-fry the peanutsuntil some peanut skins crack open and the color darkens, take out a piece to blow cool, continue to stir-fry the peanuts in the pot until fragrant, put it in a bowl without water, sprinkle a little salt and mix well.3Grind the dried chilies into chili powder, put the bird's eye chili segments, minced garlic, minced green onions, 1 spoonful of soy sauce, and a little salt into the bowl.4Heat a pot of oil and pour it in when the oil is slightly smoking, pour in the seasoning from step 2, quickly stir with a spoon to release the fragrance of various ingredients, add 2 spoonfuls of vinegar, a little pepper and mix.
