Bitter Melon with Shrimp Skin, Ingredients: 1 bitter melon (about 300g), 30g shrimp skin. Chili, ginger, garlic, green onion, chicken powder, oyster sauce, cooking wine, and soy sauce as appropriate. Method: 1. Cut the bitter melon in half, scoop out the pulp and seeds, wash it clean and cut it into thin slices, soak it in diluted salt water for 10 minutes and then drain and dry it. 2. Wash the shrimp skin, absorb the moisture with kitchen paper; slice ginger, mince garlic, cut green onion into flowers. 3. Heat oil in a pan, add shrimp skin, stir-fry until slightly yellow.

Sprouts with Shrimp Skin, Method: 1. Wash sprouts, remove the roots, and cut them into about 1cm segments. 2. Wash shrimp, cut from the back of the shrimp, don't cut through, remove the black lines. 3. Put the processed shrimp into a container, add a little cooking wine, water, chopped green onion and ginger. 4. Heat oil in a pan, add shrimp and stir-fry until 80% cooked. 5. Add sprouts, add salt. 6. Add cooking wine and chopped green onion and cook out.
