Ingredients:
Wonton wrappers 250g, fresh shrimp 300g, lean pork 250g, 2 eggs, salt to taste, peanut oil to taste, sesame oil to taste, cornstarch to taste, white sugar to taste, soy sauce to taste, ginger to taste
Cooking Steps:
1. Prepare 250g of wonton wrappers
2. Peel and devein the shrimp, removing the shrimp shells and veins
3. Cut the shrimp meat into small pieces
4. Clean and prepare shrimp heads
5. Cut the pork into pieces
6. Grind the pork into meat paste using a meat grinder
7. Add two eggs, a little soy sauce, salt, peanut oil, sesame oil, white sugar, and yellow wine, and stir until well combined
8. After mixing the meat paste, pour it into the shrimp pieces and mix well
9. After mixing the meat and shrimp filling, let it sit for 5 minutes to absorb the flavors, then start wrapping the wontons
10. Sprinkle some cornstarch on the plate to prevent the wrapped wontons from sticking to the plate
11. Today I made a lot of wontons, I put them in vacuum bags for storage, and can eat them for several meals
12. Start frying shrimp oil, heat a little peanut oil in a pan, after the oil is hot, add shrimp heads and a little ginger and stir-fry until fragrant
13. While stir-frying, use a spatula to flatten the shrimp heads, which will make the flavor even more intense
14. After stir-frying, add two and a half bowls of water and simmer over low heat for 10 minutes
15. After 10 minutes, filter the shrimp broth
16. Pour the shrimp broth into a small pot and add the wontons, cook over medium heat for 4-5 minutes
17. After 5 minutes, add salt to taste and turn off the heat when the wontons float to the surface, indicating they are cooked
18. Plate and garnish with chopped green onions
