My Family's Breakfast is So Simple: A Cheesy Rice Dish Like Pizza

My breakfast is so simple, my child enjoys a bowl of rice, and it’s even eaten like pizza with a cheesy pull.

A bowl of rice with some vegetables, without eggs, is even more delicious. My family eats it three times a week.

After so many years of being a housewife, I still have a good idea of my family’s appetite. I always control the amount of rice I make to ensure my family has fresh rice every time. But recently, I always add an extra bowl because my leftover rice is more popular than freshly cooked rice.

Leftover rice, everyone likes to make it into fried rice, adding an egg, some vegetables, and it takes just a few minutes to cook a large plate. With a plate of fried rice, I don't need to cook separate dishes. It's a lazy but clever way for housewives. Today, I'm sharing a rice cooking method with you that goes one step further – first fry the rice and then bake it, topped with mozzarella cheese that can be pulled, making the rice grains crispy and chewy, and like pizza, it can be pulled with a rich milk flavor. My child eats it three times a week and never gets tired of it!

Some friends say that cheese is high in calories, and they are afraid of getting fat. I admit that too. You can just use less, and you can make a dish once in a while to satisfy your cravings. At least it’s more convenient and healthier than eating pizza! So you can change the ingredients whenever you want, and each time you'll enjoy a different flavor.

Ingredients:

Rice 1 bowl Potatoes, carrots, peas, New Orleans chicken breast, onion, mozzarella cheese, black pepper to taste

Instructions:

1. First, cut the potatoes, carrots, and peas into small pieces and then cook them in boiling water until they change color and are cooked through, then drain them and set them aside.

2. Heat a pot with a little oil, first sauté the onion until fragrant, then add the New Orleans marinated chicken breast and stir-fry until lightly browned. If you don't have this marinade, you can marinate it with, , , and sugar, but the flavor will be different.

3. After the chicken is browned, add the blanched potatoes, carrots, and peas and stir-fry evenly.

4. Then add the rice. My rice is made from mixing large grain rice with millet, this type of rice is not only visually appealing with its combination of yellow and white colors, but it’s also healthier because millet itself has a digestive effect, and eating it with large grain rice makes it easier to digest and absorb.

5. After stirring, place the fried rice in a baking dish, cover it with mozzarella cheese. If you're not afraid of gaining weight, you can spread some rice first, then a layer of cheese, then more rice, and finally more cheese.

Preheat the oven to 200 degrees, bake for about 15 minutes, until the cheese is melted. Make sure to taste it while it's hot – it's super delicious!
