Steamed Bass Recipe

Step 1

Wash and prepare the fresh bass fish. (Make sure to remove the black membrane in the fish's belly – this is crucial for eliminating fishy smell! Rub salt over the fish's body and then rinse it thoroughly with clean water to effectively remove the fishy smell.)

Step 2

Arrange the bass fish on a plate.

Step 3

Sprinkle 10ml of (liao jiu –) over the fish.

Step 4

Salt the fish for a short period.

Place green onion segments and ginger slices on the fish.

Step 6

Bring water to a boil in a steamer. Once boiling, place the fish pan in and steam for about 10 minutes. (Many people think they should put the fish in when it's cold water, making it very flavorful and completely cooked. However, this is incorrect! The correct method is to put the marinated fish into a pot of hot water, and you shouldn't steam it for too long.)

Step 7

While the bass is steaming, cut chili peppers and green onion slices.

Step 8

After steaming, pour out the water from the pan and remove the green onion and ginger slices.

Step 9

Drizzle 20ml of Steamed Fish Soy Sauce over the fish, and arrange it with green onion slices and prepared chili pepper slices.

Step 10

Heat Hu Jia Hua Ancient Method Cold-Pressed Peanut Oil to 80%.
