Hua Shan Spinach and Vermicelli Cold Noodles - Tianyu's Recipe (Very Delicious)

Ingredients: Spinach 1 pound, Vermicelli a handful, Green Beans 1/2 pound, Scallions sliced, Garlic 1 clove, Chili flakes
Seasonings: Salt, Sichuan peppercorns, Rice vinegar, Light soy sauce, Chicken broth, Sesame oil, Sesame paste

Recipe:
First step: Soak Vermicelli, Wash Spinach and Green Beans, Mince Garlic, Slice Scallions
Third step: Heat up the pot with water, Bring to a boil, Blanch the soaked Vermicelli, Drain and pat dry, Place in a bowl for later use, Blanch Green Beans, Stop cooking when they are tender, Drain and pat dry, Place in a bowl for later use
Fourth step: Place minced Garlic and sliced Scallions on top of the Spinach, Add Light Soy Sauce, Rice Vinegar, Salt, Chicken Broth, Sesame Oil, and Sesame Paste
Fifth step: Heat up oil in the pot, Add Chili Flakes and Sichuan Peppercorns to heat up and stir-fry, Then pour the hot oil over the Garlic and sliced Scallions
Sixth step: Mix well, especially the Sesame Paste, and mix well
Notes:
1, Make sure to drain the Spinach well
2, Use more Sesame Paste, and don't pour the hot oil on the Sesame Paste, place the Sesame Paste first
3, Add more minced Garlic, and don't fry the Chili Flakes and Sichuan Peppercorns.
