Potato Stew with Beef Brisket

Ingredients:
Tomatoes, potatoes, onions, beef brisket, scallions, sugar, salt, light soy sauce, ginger
Steps:
1Slice ginger, chop scallions into segments, wash and dry the beef brisket, cut into 2-3 cm square blocks, wash and blanch tomatoes in boiling water to peel them, then cut into large pieces. Peel potatoes and cut into small pieces, and chop onions into slices.
2Put beef brisket into a pot, add cold water, bring to a boil over high heat for 5 minutes, then remove and rinse with hot water.
3Heat a wok with oil over high fire, add scallion segments, ginger slices and onions to sauté, then add tomatoes and stir-fry until softened, add beef brisket and stir-fry until the surface is sealed, then add potato cubes.
