Braised Pork Noodles
Ingredients:
880g of pork bones, two large spoonfuls of soy sauce, appropriate amount of rice wine, 10g of fine sugar, 90g of cassava powder, appropriate amount of five-spice powder, white pepper, black pepper, 3 scallion segments, 2000cc chicken broth, appropriate amount of red shallots, 4 portions of oil noodles, winter melon as desired
Instructions:

1Marinate the pork bones with rice wine, soy sauce, black and white pepper, sugar and five-spice powder for at least one hour

2Remember to mix well before marinating.
3Pour the marinated meat into cassava powder, I used 880g of pork bones, about 90g of cassava powder (approximately 10:1), adjust the amount according to your preference, aiming for a dry state, pick up any remaining powder and let it drop

4Heat an oil pot, sauté scallions until fragrant, when the scallions turn crispy and not yet yellowish-brown, remove them immediately (Scallion oil makes the braised pork even more fragrant

5Fry the braised pork in the oil pot until golden brown, you can fry it twice, increase the oil temperature for the second frying to make the braised pork even crispier

6Set aside the fried braised pork, or you can enjoy it as a standalone dish

7Take about 2000cc of chicken broth, add the scallion segments taken out just after frying, winter melon, red shallots, a little white pepper powder, two large spoonfuls of soy sauce and the braised pork, steam for about one hour
8Remove the steamed braised pork and the scallion segments, take a pot to blanch the noodles, then combine them with the two
9Oily braised pork paired with flavorful winter melon, is very delicious
Tips:
Step 1: Choose pork bones with cartilage, which has a richer taste.
Step 3, this braised pork is made using the dry-frying method, the surface does not show white powdery, when touched is not wet.
Step 7: Adjust the amount of chicken broth and seasonings according to your preference, I suggest you can make it a little more flavorful, it will be easier to dilute with the noodles.
