Mapo Fish Slices
Main Ingredients:
Grass Carp 400g
Seasonings:
Chili Powder 15g Salt 12g Red Chili 20g Sichuan Peppercorns 10g Ginger 20g Cornstarch 10g Garlic 10g Cooking Wine 30g Vegetable Oil 80g As needed
Instructions:
Gut and clean the grass carp, cut the fish meat into slices 6cm long and 0.3cm thick, season with salt, chili powder, cooking wine, and wet cornstarch, marinate for flavor. Remove the chili peppers from the stems and cut into 1cm long segments; chop the garlic; wash the ginger, slice into 2cm segments. Heat vegetable oil in a pot until 60% hot, then add the fish slices to fry until cooked, remove and put them on a plate when they are crispy. Heat 50g vegetable oil in a pot until 50% hot, add Sichuan peppercorns, red chili segments, garlic, and ginger fry until fragrant, drizzle over the fish slices to complete.
