Ingredients needed:

Half a chicken, chestnuts, (liao jiu - liquor), (sheng chou - soy sauce), (la chou - dark soy sauce), sugar, salt, ginger, scallions, star anise, garlic

Cooking steps:

Step 1: Cut the chicken into half and chop it into small pieces, wash it clean. Put water in the pot with chicken pieces, ginger slices, scallion segments, liquor, and boil until the chicken pieces turn color, skim off the foam, and cook for two minutes before taking out and cooling in cold water to remove blood foam.

Step 2: Heat oil in a pot with two spoonfuls of sugar over low heat until it turns into amber color, then add the chicken pieces and stir-fry until browned.

Step 3: Add star anise, scallion flakes, ginger slices, and stir-fry until fragrant.
