Yesterday we had bone marrow, today we're stewing trotters. When relatives sent over food, the trotters had already been meticulously de-haired, but hadn't been cut up. This dish has two key characteristics: firstly, I used pure safflower oil, resulting in a very yellow color, and secondly, I skillfully separated two fresh grass carps, selecting the tripe portion and braising it in large chunks with plenty of garlic, giving it a predominantly savory flavor.

I also want to share with you that besides braising beef tripe, I personally prefer the fish tail of big fish. You know this part has been swimming all day, so it's incredibly tender, and braising fish tail requires pure safflower oil or rapeseed oil – it's wonderfully fragrant.
