Ingredients:
2 ribs, 2 green chili threads, 3 red chili threads, 35g garlic.
Seasonings:
1. 500g edible oil, 2g baking soda, 2g white pepper, 5g toasted sesame seeds.
2. Marinate the ribs: 100g garlic, 20g ginger, 30g scallions, 20g white onion, 5g star anise, 30ml rice wine, 2g salt, 2g chicken broth powder, 15ml fermented soybean paste.
Instructions:
1. Cut the ribs into 5cm pieces;


2. Wash the ribs with water to remove excess blood water;


3. Add a spoonful of baking soda and mix well;


4. Marinate for 3 hours;


5. Rinse the baking soda off with water;


6. Rinse with water for about 30 minutes;


7. Then drain the water with a colander;


8. Add the smashed and chopped garlic to the ribs;


9. Add the grated ginger to the ribs;

10. Chop the scallions into long segments and gently rub them with your hands, then add them to the ribs;


11. Add the sliced white onion to the ribs;


12. Add a few star anise particles;


13. Add a little rice wine;


14. Then add a spoonful of salt, a spoonful of chicken broth powder and a little fermented soybean paste sequentially;


15. Mix thoroughly and marinate in the refrigerator overnight;


16. Take out the marinated ribs;


17. Cut the green and red chili threads into 3cm segments for preparation;


18. Smash and prepare 35g garlic;

19. Heat the pot, add a suitable amount of edible oil;


20. Sprinkle the marinated ribs with a layer of dry baking soda;


21. Heat the oil to 50% and gently lower the ribs into the pot;


22. Fry for 5-6 minutes and remove to drain the oil;


23. Leave a small amount of oil in the pot, add the chili threads and smashed garlic, stir-fry until fragrant;


24. Add the fried ribs and stir-fry a few times;


25. Add a little white pepper and stir-fry evenly;


26. Sprinkle some toasted sesame seeds;


27. Serve in a dish.

1. When marinating the ribs, the amount of garlic in the marinade should be relatively large, so that the garlic flavor will be more fragrant.
2. When frying the ribs, the oil temperature should not be too high, maintain 50% oil temperature when lowering the pot, slow-fry for 5-6 minutes.
