One Atlantic Codhead (about 700g)

Large Grain Salt (Sun-dried Salt) 2 tablespoons (10g) 1 tablespoon (15ml)
1Wash the codhead thoroughly, cut it in half, and then cut it into large pieces, blotting with paper towels.
2Place the codheads on a wire rack, brush with oil, and sprinkle generously with salt grains. Preheat the oven with top heat for 5 minutes at 250 degrees (MAX).
3Place the codheads (skin up) on the wire rack and bake for 50 minutes. Remove the wire rack and spray with fragrant white wine, then return to the oven for another 10 minutes.

1Marinate spring onion and pork; peel and slice the spring onion, removing the tough roots.
2Beat the spring onion with the back of a knife to tenderize it and then slice it.
3Sauté minced garlic in hot oil, then add the marinated pork and stir-fry for 2 minutes.

4Heat the wok again, pour in a little oil, and sauté the sliced spring onions.
5Stir-fry for 2 minutes, add green pepper, and season with soy sauce, salt, and sugar.
