Tofu Balls
1. First, prepare some pork and chop it into meat filling. Don't use a blender to make the meat filling, as this will make the meat filling more sticky. Then put it in a bowl for later use.
2.After chopping the meat, add tofu, chopped green onions, ginger, salt, and black pepper to the bowl. Use your hands to mix the tofu thoroughly. Then add 2 tablespoons of starch and 2 tablespoons of breadcrumbs. Whisk in one egg and mix until a uniform size of tofu balls are formed. Set aside.
3.Now you can start heating up the pan. Add a generous amount of oil. When the oil is 60% hot, immediately turn the heat to low. Then slowly add the tofu balls. Fry them over medium heat until they turn golden and set, then stir-fry for 5 minutes. When the outer skin turns golden and the tofu balls float, it's time to turn off the heat and drain the excess oil.
4.Next, prepare the sauce. In a separate pot, add some water and bring it to a boil. Then add salt, sugar, oyster sauce, soy sauce, and a little vinegar. Bring it to a boil again. Add a little cornstarch slurry to thicken the sauce. Stir constantly until the sauce is thick. Add chopped green onions and red pepper flakes, and turn off the heat. Pour the sauce over the tofu balls. This delicious and juicy, sweet and sour tofu balls are ready to be enjoyed!

1. Choose fresh pork. Frozen meat makes the tofu balls have a bad texture and easily disperse. Also, since we're mainly eating tofu, the ratio of tofu to pork should be 2:1.
2.When frying tofu balls, you can add breadcrumbs or an egg to make the texture more fragrant and crispy.
3.When the oil temperature reaches 60%, add the tofu balls. If the oil temperature is too low, they will easily disperse.
