Yellow Braised Yak Beef
Slice the whole beef skin yak beef thoroughly and cut into thick slices; cut green and red peppers into long granular shapes.
Heat a wok over high heat, add a suitable amount of edible oil to heat until 70% hot, then add the yak beef slices and stir-fry until the moisture is almost dry and rolled up, then add granular green and red peppers, Sichuan peppercorns, wild Sichuan peppercorns, ginger slices and garlic cloves to stir-fry out fragrance.
After adding a small amount of fresh soup, add soy sauce, cooking wine, salt, sugar, oyster sauce and thirteen spices, simmer until the soup is slightly dry, add celery stalks, chicken broth, Sichuan peppercorn oil and red oil to stir-fry evenly. Arrange in hot pot basin and sprinkle with fried yellow beans, place on charcoal fire to heat and eat.
