Delicious Xinjiang Fried Noodles, Ready in 20 Minutes
Xinjiang fried noodles have been popular in southern and northern China in recent years. As a genuine Xinjiang kid, I'm here to teach you how to make authentic Xinjiang fried noodles in 20 minutes, and also to give this recipe to all Xinjiang girls—oh, I mean, all girls! Here's the secret recipe.
1 Prepare two stalks of coarse celery, half a beef fist (or half a chicken fist), one tomato, two green peppers, noodles soaked overnight until they lose their white hearts. Half a bunch of green onion, one-third of a garlic head, and noodle sauce (or make your own noodle sauce – it's good to make a large batch, you can use it to season various dishes and noodles). I don't want to eat meat, so I put in a sausage, and some mushrooms. The mushrooms are more fragrant, the kind that are yellow and floating in water, or you can use mushrooms from a small chicken stew – soak them in water beforehand!
2 Cut all the ingredients: chop the celery into segments, and chop the others to your liking.
3 Heat oil in a pot – not too much. First, add celery, sausage, green onion, and chili peppers. If you have meat, sauté the meat first, add a little salt, flower powder (Sichuan peppercorns), and soy sauce. Let the meat change color before adding the vegetables. Since I don't have meat, I put the sausage in directly and add a little flower powder (Sichuan peppercorns). Don't add salt!
4 Add the mushrooms and sauté until the flavors combine!
5 Add the tomato and sauté until it releases some juice
6 Add noodle sauce and continue to sauté
7 Add the water from the mushrooms, plus about one bowl of water – this is a secret I'll tell you about in a moment, and it's unbelievably delicious!
8 Bring the water to a boil, add the noodles, and stir-fry quickly – be careful not to burn the pot. Taste the sauce and add more salt if needed. Check if the noodles are cooked through and cook for two more minutes. Add flavor and then, just before serving, add chopped garlic and a pinch of MSG or chicken powder.
9 Okay, it's ready to serve!
