Homemade Baked Eggplant, More Fragrant and Delicious Than BBQ Stall Versions
Although eggplant is an ordinary ingredient, every time you make it, you can taste its simple but not simple flavor.
Whether steamed, boiled, stir-fried, or baked, it can bring out its characteristic soft and tender texture. It's also not greasy to eat.

If you miss the juicy and spicy flavor of grilled eggplant at a barbecue stall, you don't need to go out, you can make it at home, and it's even more delicious!
The ingredients and method are very simple. First, put the eggplant and chili peppers in a baking tray lined with aluminum foil, and brush a layer of oil on the surface.
Then, preheat the oven to 200 degrees Celsius for 5 minutes. After about 5 to 10 minutes, when the chili peppers turn slightly wrinkled, you can take them out. Continue baking the eggplant for about 15 minutes.


While the eggplant is baking, chop the baked chili peppers into small pieces, and mix them with chopped fresh chili peppers (such as) and celery.
Next, season with appropriate amounts of salt, vegetable powder, and soy sauce.
Add a little Sichuan peppercorns (you can also omit it), and stir well.
After baking the eggplant, take it out and cut it in half from the middle (without cutting through the back), and make a few cuts on the eggplant meat for better flavor absorption. Then spread the prepared chili pepper mixture evenly on the eggplant surface, and finally sprinkle some celery to enhance the fragrance.
Put it back in the oven and bake for about 10 minutes.

The baking temperature and time here are just for reference, adjust according to the of your oven. If the eggplant is large, bake it for a longer time, and if it's small, bake it for a shorter time. When the eggplant skin becomes wrinkled and soft when pressed, it means it's cooked through.
This dish is spicy, I added, it's too spicy, everyone can omit the red or replace it with which is not spicy.
