Ever since I learned this pumpkin recipe, I eat it five times a week – I wish I could eat more! It’s not fried or boiled, it’s beautiful and delicious.

Hi everyone, welcome to Xiao Yuan's Kitchen! Today, I'm sharing 'Ever since I learned this pumpkin recipe, I eat it five times a week – I wish I could eat more! It's not fried or boiled, it's beautiful and delicious.'

There are two common types of pumpkins: young pumpkins, also known as butternut squash, which are crisp and suitable for quick stir-fries. The other is golden-yellow, also called old pumpkins, which are sweet and tender and are perfect for steaming and boiling. Pumpkins are truly a treasure trove, rich in beta-carotene, which converts within the body to Vitamin A, a vital nutrient that promotes children's bone development and strengthens their immune system.

Do you usually just stir-fry pumpkins? I'm teaching you a new way to eat them! They look adorable, are chewy and sweet, and are particularly beautiful and delicious. Ever since I learned this pumpkin recipe, my kids beg for it, eating it five times a week – they wish they could eat more! The recipe is also easy for kitchen newbies to master. Let's take a look at the recipe below.

Instructions:

Step 1: Peel and cut the pumpkin into thin slices, arrange it in a dish, and steam it for about 12 minutes.

Step 2: While the pumpkin is steaming, prepare 9 portions of red bean paste. Each portion of red bean paste is 20 grams. Make them into small balls and set aside.

Step 3: Once the pumpkin is steamed, take it out and use a fork to press it into a smooth puree.

Step 4: Add 100 grams of sticky rice flour and 100 grams of glutinous rice flour, and stir well. Here, the pumpkin puree is 180 grams. The water content of pumpkin puree varies, so adjust accordingly.

Step 5: Knead the mixture into a dough. The dough should be smooth and pliable, without cracks.

Step 6: Divide the dough into nine portions and take one portion, roll it into a ball, then flatten it. Place the red bean paste in the center.

Step 9: Then use the scraper to press out markings along the rice-shaped pattern on the sides of the dough, and the little pumpkin embryo is ready!

Step 10: Boil water in a steamer, and place the finished little pumpkin embryos in the steamer. Steam for 12 minutes.
