1. Prepare the shrimp, about the size of your finger is best.

2. Remove the shrimp shells and devein the shrimp, rinse thoroughly with water and pat dry with kitchen paper.

When making salt-baked shrimp, use coarse sea salt. The shrimp should be about the size of your finger, and the baking time shouldn't be too long, otherwise the shrimp won't be too soft or too salty.
Removing the shrimp shells, generally starts from the head of the shrimp, between the third and fourth segments, use a toothpick to insert and lift up, you can remove the shrimp shells.
