Ingredients:

2 Eggs, 2 Tomatoes, 150g Noodles, 1 Spoon of Soy Sauce, 1 Spoon of Tomato Paste, Sugar to Taste, Oil to Taste, Green Onions to Taste

Instructions:

1. Prepare the ingredients, 2 eggs, 2 tomatoes, 150g noodles.


2. Wash the tomatoes clean and blanch them in boiling water to remove the tomato skin, then cut them into small pieces.

3. Crack 2 eggs into a bowl, add a little and a pinch of salt, and stir until smooth.


4. Pour a little oil into a pan and pour the scrambled eggs into the pan. Scramble them quickly and stir-fry until cooked, then remove.

5. Heat oil in a separate pan and add the chopped tomatoes to the pan. Stir-fry until the tomatoes are slightly dry, add 1 spoon of soy sauce and stir-fry until smooth, then add 1 spoon of tomato paste and stir-fry until evenly mixed, add sugar to taste to adjust the seasoning.


6. Transfer the freshly fried eggs into the pan, stir-fry until evenly mixed and then turn off the heat.

7. Pour an appropriate amount of water into the boiling pot, bring to a boil and then add the noodles to the pot, cook until no white core remains.

8. Scoop out and put into cold water for a quick cooling


9. Scoop out and put into bowl, then pour the stir-fried tomato and egg onto the noodles, mix well. You can also sprinkle with some green onions or coriander if you like.
