Small Crispy Meat is often made with lamb in the Yancheng area for folk banquet meals, while Jin City Cuisine uses fat pork belly first boiled, then steamed and fried, called ‘Purple Sorrel Knife Back’. It is a traditional dish in Shangdu area, and the folk often use five-spiced pork in Yiyang area, first fried then boiled and steamed, called ‘Hubu Meat’, it’s a must-have dish for festive occasions and large banquets! In the Changzhi area, it has been innovated into Crispy Meat with Mustard and Fan Dishes, which has become a local famous dish. In the Taiyuan area, it has been innovated with Wang Family Small Crispy Meat with Sour Cabbage and Fish Lips Dish!
