Cooking method
1. First, prepare the dried shiitake mushrooms and mung beans. The method for marinating the dried shiitake mushrooms will be detailed in the small tips below.

2. Chop the garlic, chili peppers, ginger, and scallions separately and set them aside. This dish tastes better with chili peppers. If you don't like spicy food, you can reduce the amount of chili peppers accordingly.

3. Heat a wok and heat oil, then pour in the dried shiitake mushrooms and fry until slightly golden brown.

4. Then add chopped garlic, chili peppers, ginger, and light soy sauce, and add another half bowl of hot water, cover the pot and steam for 2-3 minutes. If the dried shiitake mushrooms are not salty enough, add a little salt and chicken powder.

5. Add the mung beans and stir until combined, cover the pot and steam for 3 minutes.
6. Steam the mung beans until they are completely cooked and flavorful. Just before serving, sprinkle a little scallion flower and turn off the heat.

Method for marinating dried shiitake mushrooms: 1. Remove the intestines of the shiitake mushrooms and wash them clean and drain them; 2. Put the mushrooms in a basin, put a layer of salt and spread it evenly, and sprinkle with pepper, ginger shreds, and scallion segments; 3. Marinate for 2 days until the flavor is fully absorbed, then take them out and dry them in the sun. Turn them over a few times during drying. 4. Dry until 80% before putting them in the refrigerator for storage, don't dry them too much.
