Ingredients: 160g of ordinary flour, 150ml of milk, 60g of sugar, 60g of oil, 2g of yeast, vinegar (white vinegar can also be used), candied fruit, dried grapes (you can use any dried fruit you like).

Step 1: Process egg yolks and egg whites. Crack eggs into two bowls, and separate the egg yolks and egg whites into two bowls. Add 60g of oil and 150g of milk to the egg yolks, and stir until well mixed.

Then sift 160g of ordinary flour into the bowl, use a spatula to stir evenly, and flip until the flour is free of granules, and it should be smooth and silky when you lift the spatula.This step must be flipping, not stirring, because stirring will make the flour rise quickly, and the cake made will not be tender.

Process egg whites.

Add a few drops of vinegar (white vinegar or fragrant vinegar can be used, but not too much), which can remove the fishy smell and also help with fermentation, add 60g of white sugar, and add the white sugar in 3 times, whip the egg whites with an electric whisk quickly until the egg whites have fine bubbles, then add the first time the white sugar, continue to whip quickly until the egg whites have a delicate feeling, then add the remaining white sugar, stir until the egg white foam cannot be poured out of the bowl, the egg white foam is ready.

Step 2: Make the cake. Add half of the egg white foam to the egg yolk liquid, and flip it evenly with a spatula,This step must be flipped evenly, because stirring will break the bubbles in the egg white foam and prevent the cake from rising.

After flipping evenly, pour the egg yolk and egg white mixture into the remaining egg white foam, and flip it evenly. Prepare for the next step.

Step 3: Prepare four small bowls, line the bowls with absorbent paper, place the prepared candied fruit and dried grapes in the bowl, pour the cake batter into the bowl, about 1cm from the edge of the bowl, cover each bowl with heat-resistant film and place it in the steamer.

Step 4: Boil water in a pot, after the steam rises, put the steamer into the pot, just like steaming buns, steam for 35 minutes, turn off the fire and let it steam for 5 minutes, then you can take it out. When you take out the small bowl cake, it’s hot, be careful!

Delicious and tasty small bowl steamed cake is ready. Invert it into the bowl, the dried grapes and candied fruit are on top, just like cakes sold at the market, soft and delicious, especially fragrant.
