Then add the prepared sour and sweet sauce. The sour and sweet sauce ratio is: 4 sour plums + 50 grams of white sugar + 2 spoons of (doubanjiang - chili bean paste), then dilute with water to make the sauce. Pour the prepared sauce into the fried fish, then add an appropriate amount of water and steam until it is fully absorbed and thickened before plating and serving.

The finished fish is plated and served. The fish meat is tender and juicy, with a sour and sweet taste, and it's not greasy.
