Step 1
Peel and cut the potatoes into slices, steam for ten minutes (after the water boils).

Chop into minced bits and set aside to be ready for use.

Steam the potatoes and mash them into mashed potatoes (you can also add a little black pepper and salt, but I prefer the original flavor so I didn't add it). Then put them in the middle of the plate and shape them into a mountain shape, you can use a fork to slide a few times to make the mountain shape more realistic.

Heat the oil in a pan, stir-fry the pork. Add soy sauce, salt, pepper, sugar and chili, stir-fry for a few seconds, then add an appropriate amount of water and cook for three minutes.

Add more water and starch slurry (if you like, you can also add a little scallion), then stir continuously with a spoon, add a little sesame oil and mix evenly. Then use a spoon to drizzle the pork broth over the mashed potatoes. A delicious volcano mashed potatoes is ready, which is a great accompaniment to rice.
