Instructions:
1, Wash and cut the duck into pieces, and smash the ginger into pieces. Boil water in a pot until it boils, and cook the duck pieces for 3 minutes to remove blood water.

3, Heat oil in a cast iron pot to 70% heat, then add the duck pieces and stir-fry constantly, continuously extracting moisture from the duck meat, see the duck skin tighten, the duck pieces shrink, move the stir-fried duck to a pressure cooker, the cast iron pot does not need to be washed.
