Tofu skin is made by heating bean curd and then keeping it warm for a period of time, forming a thin layer on the surface, which is then peeled out and hung down in a branched shape, and then dried to make it. Therefore, it must be soaked in water to soften before cooking.


When soaking tofu skin, some people use water to soak it, which not only takes a long time to soak, but also doesn't soak through and is hard-hearted. Some people use boiling water to soak it, resulting in it being too soft and the nutrients are lost. So, how can we properly soak tofu skin? Ingredients: Tofu skin, black fungus, onion, scallions 2 bunches, oyster sauce 1 spoonful, chicken broth 1 spoonful, salt 1 spoonful, edible oil as needed.


Cooking method:

Step 1: First, cut the tofu skin into small segments and add 40° warm water. Remember, it's warm water, not boiling water, so it will fully soak and the texture will be better.


Step 2: Add one spoonful of edible salt and stir evenly for 30 minutes. Adding salt not only kills bacteria but also speeds up the tofu skin's soaking speed, key nutrients are not lost.


Step 3: The time for soaking tofu skin is also used to soak the black fungus, wash it and soak it. Onion is peeled and cut into long strips. Scallions are washed and cut into small segments.


Step 4: When the time is up, the tofu skin is soaked well and is not hard-hearted, then wash and control the moisture with clean water.

Step 5: Pour a suitable amount of edible oil into the wok until it's 80% hot, add scallion whites and sauté to bring out the fragrance, then add the tofu skin and black fungus and stir-fry for about 1 minute.


Step 6: Pour in onion shreds and shake the pot over high heat, onion is easy to cook, and the cooking time should not be too long.


Step 7: Sprinkle scallion segments, add a spoonful of chicken broth and oyster sauce for seasoning and stir-fry evenly.
