Western purslane honey date aged kidney soup (2 servings)
Ingredients:
Western purslane 1 bundle
Aged kidney (duck kidney) 3 pieces
Pig tendons $50
Dried scallops 5-6 pieces
Chinese magnolia leaves (Northern Magnolia) 10g each
Honey dates 2 pieces
Chinese cinnamon (Chen Pi) 1 small piece
Ginger 1 small piece
Water 5 bowls (for electric stove; if using open fire, increase water amount or time by 2-3 times
Instructions:
1. Soak aged kidneys and dried scallops for about 1-1.5 hours until softened. Chinese cinnamon (Chen Pi) washed, soaked for about 1 hour, scrape the flesh.
2. Soak Western purslane in coarse salt water for 5-10 minutes, then rinse with running water, repeat the soaking step 3-4 times.
3. Cut aged kidneys and set them aside with pig tendons before boiling.
4. Wash Northern Magnolia and honey dates, soak for about 5 minutes. Peel ginger and set it aside.
5. Bring water to a boil, add all ingredients (except dried scallops), then reduce the heat and simmer for about 1.5 hours, add dried scallops and simmer for another hour.
