Cold Storage Frozen Like Jelly, Refreshingly Cool! Seasonal Delicious Dessert, Mango Coconut Sticky Rice
Used to eating traditional Thai coconut sticky rice. This version, with delicious mango, elevates the flavor to be richer and more layered! It's a delightful dessert for all seasons!

Mango Coconut Sticky Rice
Ingredients
Pandanus Leaves 8 pieces
Sticky Rice 3 tablespoons
Mango 2
Coconut Milk 165g
Water 200ml
Sugar 3 tablespoons
Salt 12 teaspoons
Rice Flour 3 tablespoons
Mango Coconut Sticky Rice Recipe

1. Cook sticky rice in boiling water over medium heat for 15 minutes, turn off the heat and cover for about 20 minutes. Repeat if necessary until the sticky rice turns completely transparent. Drain and immediately mix in 1 tablespoon of sugar while hot.
2. During the cooking of the sticky rice, wash and dry the fresh pandanus leaves. Use scissors to cut through the leaf veins every two inches, stopping at the fifth cut to cut through the dark veins. Fold the cut leaves into a box shape, and apply glue paper to the edges and bottom.

3. Arrange the sticky rice evenly into the pandanus leaves, allowing to cool.

4. Slice the mango flesh and evenly spread it on the sticky rice.
5. First boil 100ml of water to boiling, add 2 tablespoons of sugar and stir until dissolved, then add coconut milk and salt and cook until smoking. Mix rice flour with the remaining 100ml of water and slowly add to the coconut milk mixture, stir over low heat until boiling and simmer over low heat.
6. Allow the coconut milk to cool slightly before evenly pouring into the pandanus box and adding the mango slices for decoration. Chill in the refrigerator for at least one hour before serving.
Tips
1. Traditional Thai coconut sticky rice consists only of sticky rice and coconut milk layers, decorated with corn kernels.
2. If you want the sticky rice layer to have a grainy texture, don't add sugar until the sticky rice is translucent. You can also pass the sticky rice through cold water to reduce its stickiness. Finally, gently heat and mix with sugar.
