Instructions: 1. Clean the whole chicken thoroughly, then cut it into pieces. Bring water to a boil and blanch the chicken to remove the scum, then drain and set aside in a clean basin

3. After the spices have released their flavors, add the drained chicken to the wok and stir-fry until lightly browned, then add appropriate amount of sugar and cook for a moment, followed by appropriate amount of salt and soy sauce (I use chicken legs, as the whole chicken is too much)

4. Add the pre-cut potato chunks and simmer in a small amount of water over low heat, ensuring the water covers the meat

5. The final step! Once the potatoes are cooked, the chicken is tender, then thicken the sauce with a cornstarch slurry, taste and adjust salt if needed, and serve!
