Ingredients needed to make sea sponge cake: 60 grams of low-gluten flour, 2 eggs, 50 grams of white sugar, 20 grams of butter, 20 grams of milk
Below is the detailed process:
1. Heat a pot of water to about 40 degrees Celsius, slightly warm. Place another pot on top of the water and beat two eggs into it, along with 50 grams of white sugar.
2. Beat the mixture with a whisk until the sugar is completely dissolved, then increase the speed of the whisk to make the egg mixture lighter and fluffier in color
3. Take out the meringue, melt the butter over low heat. Add 60 grams of low-gluten flour to the meringue and beat until no dry powder is visible, then scoop a spoonful of flour into the melted butter and stir until it is well combined, then pour the flour mixture back into the meringue and stir until well combined.
4. Line the bottom of the mold with parchment paper, then pour the cake batter into the mold, making sure the batter is evenly spread so that the shaped cake looks good.
5. Place the cake batter in the oven at 170 degrees Celsius for 30-40 minutes, until the surface is golden brown, take out the baked cake carefully, demould it with the right side up, and let it cool before removing the parchment paper.
