Red braised pork is really delicious, I could eat five pieces!

Making process:

1.3 pieces of pork belly are washed clean, soaked in cold water for 15 minutes and drained, using a meat tenderizer or the back of a knife to chop the pork belly into smaller pieces (to make the meat more tender), add 1 spoon of cooking wine and ginger slices, marinate for 15 minutes.

2. Heat oil in a pan, evenly pat the marinated pork belly with dry starch, when the oil is heated to 70% hot, add the pork belly, fry until both sides are golden brown, remove and drain.

3. Add a little base oil to the pan, add chopped scallion, ginger slices and minced garlic to saute until fragrant, add the fried pork belly and stir-fry over medium heat.
4. Pour in 2 tablespoons of light soy sauce, a little sugar and salt (salt can be added or not, depending on personal preference) and stir-fry until evenly mixed, add boiling water to cover the pork belly halfway, cover and cook over medium heat for about 6 minutes.

5. Turn the heat up high to thicken the sauce until slightly viscous, turn off the heat and serve. Red braised pork is complete!
