Dumplings are commonly found in our lives and loved by many. The filling of dumplings has many kinds, such as beef, pork, lamb, etc. Dumplings symbolize reunion, and Chinese people have a special affection for dumplings. Eating dumplings during the Spring Festival is an annual event. Because there are small children at home, they still can’t eat properly like adults, dumplings have become a frequent dish in my family. Normally, we eat a lot of big fish and big meat. Today, let’s share the method of making vegetarian dumplings. This dumpling filling is particularly fresh, and the taste is simply unbeatable.
I.Soak dried wood ear mushrooms, if you have time, you can soak them in advance. Don’t soak wood ear mushrooms for too long when soaking them, just soak them to the amount you need to eat. If the soaked wood ear mushrooms are sticky and have a smell, discard them immediately and don’t eat them.
II.Prepare 300g of chives. First, pick off the damaged leaves and wash them. Remove the soil from the roots carefully, or you can cut off a small part of the roots. After washing, control the moisture.
III.Prepare 100g of fresh shiitake mushrooms. I used fresh shiitake mushrooms, which also need to be washed first.
IV.2 eggs, beat them into a bowl, stir the egg yolk with a chopsticks, heat up the oil in a pan, pour in the egg yolk, stir with chopsticks, and cook the egg yolk fluff. If there are large pieces, use a spoon to chop them into small pieces, and pour them into a bowl for later use.
V.Prepare 10 pieces of fresh shrimp, peel off their heads, shells, and shrimp veils.
VI.Now let’s make the dough. Pour 500g of flour into a basin, pour in 240ml of water slowly while stirring with chopsticks, form a large dough mass, knead it into a dough, there must be no dry flour, if it can't be kneaded smoothly, let it stand for 10 minutes and knead it again, it will become smooth. Put it in a basin and let it rise for about 30 minutes. This dough is relatively hard, so it takes patience to knead.
VII.Cut the chives into chive pieces, add a spoonful of sesame oil, and stir well. Adding sesame oil can seal the moisture of the chives, so that they won’t release water when adding salt later.
VIII.Cut the shiitake mushrooms into small pieces and add them to the chive basin.
IX.Don’t add any seasonings temporarily, including salt.

XI.Let the dough rise for a while, then start kneading the dough. First knead a piece of dough and shape it into a strip, use your hands to pull or use a knife to cut it into the size you want. Then use your hands to roll out the dough into a dough with thick middle and thin edge. Because the dough is relatively hard, kneading can be divided into two pieces to knead, which is easier to knead.
XII.Now let’s make the filling. 4g of salt, oyster sauce, ginger, Sichuan peppercorns, five-spice powder. This filling is already very fresh, so don’t add too much seasoning, and adding seasoning is the last step because if the filling releases water, it will be more difficult to pack dumplings. This process is to prevent the filling from releasing water.
XIII.Take a dumpling skin, put a suitable amount of filling on it. Today we’re going to make a large-filled dumpling, first fold the dumpling skin in half, use the left thumb to hold the left side of the dumpling skin, and then use the right thumb to hold the right side of the dumpling skin, squeeze the two thumbs out to squeeze the dumpling belly, in this way the large-filled dumpling is completed. XIV.Boil a large pot of water, add a little salt to the water, when the water boils, put the dumplings in, after the water boils again, add a small bowl of water, continue to cook until the water boils again, the dumplings will be cooked. Vegetarian dumplings need to be cooked twice in the water. If it’s meat dumplings, they need to be cooked three times.
