Fish fragrant eggplant pot
Ingredients:Eggplant and melon 500g, chicken granules 100g, fried fragrant fish 10g, braised sauce 30g, celery grains 50g, green and red bell pepper grains 20g, stock 1 cup, Shaoxing wine, garlic, scallion flowers, dark soy sauce, sesame oil appropriate amount.
Method:
1Select long-bodied eggplant and melon, slice into strips, remove skin, cut into 4 pieces, about 12cm long.
2Heat the pot, add oil, heat to about 60% hot, add eggplant strips and stir-fry for about 1 minute until cooked, drain off the oil.
3In the remaining oil in the pot, add garlic, celery grains, bell pepper grains, braised sauce, stir-fry, then add chicken granules and stir-fry evenly, add Shaoxing wine, stock, eggplant strips and the above seasonings and fried fragrant fish, simmer for a moment, add a little cornstarch, add sesame oil.
Turn into a clay pot, heat to boiling, add scallion flowers, cover and serve.
