Taishan, Guangdong's Charitable Bullen Balls: Strange Name, Can They Be Delicious? Let Me Show You How to Make a Feast
In Taishan, Guangdong, during the Chinese New Year, a must-have is Bullen Balls (). They always make a large pot of these, which are very ordinary rice flour dumplings. The trick is to quickly knead the dough with boiling water; you need to boil the water for a while before pouring it into the dough and quickly forming it into a dough. And you need to knead it a lot, which will make them chewy (). This process is like boiling your finger in hot water – it's incredibly refreshing! Kneading the dough also results in a full head of sweat, a lot of hard-earned sweat that yields a chewy dumpling.
During the New Year, they will make the dough into various shapes they like, such as round, small long strips, ducks, gold bars, and flat ones… etc. It is said that different shapes have different meanings, representing people's hopes and expectations for the new year.
Bullen Balls are made in large quantities during the New Year and are offered to ancestors. Then they are stored and eaten little by little throughout the entire new year. Previously, they were usually stored in water, changing the water every other day. The water used to soak the dumplings had to be sufficiently chewy, or else they would quickly become loose and mushy. Nowadays, people have adopted another storage method – they don't need to change the water all the time, and they just put them in the refrigerator and take them out to thaw before eating.
A must-have during the Chinese New Year, filled with childhood memories.
