How to Make Delicious Pickled Cucumbers - Simple and Easy Recipe!

Mom's childhood, her parents were vegetable farmers, with a lot of land, so they were very busy, so her mother always made all kinds of pickles, big white cabbage, heart-of-palate cabbage, bean sprouts, radishes, cucumbers, and the family's big jar seemed to never rest. The pickles made were not only eaten at home but also given to aunts and uncles.
Probably influenced by her mother, I also like to make some pickles when I have free time and put them in the refrigerator to eat with porridge in the morning and meals at noon, which makes me feel very comfortable.

The methods for making pickles are different in different places. However, in general, I don't like too complicated methods. I prefer simple and easy-to-operate methods. Because of the simple method, I don't make a lot of it at a time, and it's finished after eating, which is refreshing and healthy. For example, the spicy cucumber and radish slices we shared before are like this.
Today I'm going to share a delicious pickled cucumber.

Pickled cucumber – cucumber pickled with sauce, so it's the most critical to make a suitable sauce in the right proportion.
To facilitate everyone's operation, Mom used a spoon to measure a suitable sauce proportion.You can see it clearly, even kitchen newbies can succeed in one go.
How to make delicious pickled cucumber
1 Prepare 5 cucumbers. The cucumbers should be fresh and firm when squeezed.

2 Prepare the ingredients: 5 dried chili peppers, a whole head of garlic, about 20 grains of Sichuan peppercorns, 1 slice of ginger, and 5 bunches of coriander.
Then cut them up according to the picture and prepare them.
Note: The coriander should be separated into stems and leaves, stems cut into small segments, and leaves kept separately.

3 Wash the cucumber, cut it into three pieces, then split it in half. Use a spoon to scoop out the core (you can also remove it, but the cucumber will be crispier). Then cut into small pieces, one small segment cut into 8 pieces.
4 Put the cut cucumber pieces into a large bowl and add a large spoonful of salt.
Use your hands to mix the cucumber and salt evenly, and marinate for about 20 minutes until water comes out.

If you make a small amount of cucumber, you can marinate it for 10 minutes.

5 While the cucumber is marinating, prepare the sauce.
Heat oil in a pot over medium heat, turn off the heat, pour in Sichuan peppercorns, garlic, dried chili peppers, ginger and coriander stems, and extract the aroma with hot oil.
After the ingredients in the pot have cooled, pour them into a large bowl.
Then pour in 5 spoonfuls of soy sauce, 1.7 spoonfuls of old soy sauce, 4 spoonfuls of vinegar, 1 spoonful of oyster sauce, 1 spoonful of sesame oil, and 1 spoonful of sugar, and stir evenly to make the sauce.

Note: 1 The spoon is like the picture, the ordinary soup spoon at home.
2 The proportion of this sauce will taste slightly sour and sweet with a hint of soy sauce, you can adjust it according to your own taste.6 Then add the marinated cucumber and coriander leaves, and stir evenly.
(Note: Do not discard the water from the marinated cucumber, even if you add the cucumber to the large bowl, squeeze a little water first).
7 Cover with plastic wrap and marinate for more than 2 hours until the cucumber is soft, then it can be eaten.
I usually put it in the refrigerator to marinate overnight.

The marinated cucumber can be divided into sealed jars for storage for about a week.
Eat it by picking up the cucumber directly, using a clean and dry chopsticks, and the sauce can be reused.
