Procedure steps

1. Cut the chiffon cake into two pieces, put it into the mold, fill the holes with cake slices, and set aside for later use. You can also use cookies to make the cake base.
2. In the cream, add chocolate, heat and melt over warm water. Alternatively, place it in a small saucepan, which will melt faster, use the smallest fire, and the temperature should be 50-60 degrees Celsius when it is melted, you can turn off the fire. The temperature is close to the temperature of the hand, it’s quite fast.

3. After the chocolate melts, add fine sugar and stir to melt. After adding sugar to the chocolate, you can taste the sweetness. If the chocolate is sweet or according to your preference, you can increase the amount of sugar.

4. The chocolate liquid is kept warm, the gelatin sheet is placed in ice water, then put it in the refrigerator to chill for about 10 minutes. Put one piece at a time, so that the gelatin sheets don’t touch each other and don’t absorb water, which affects the solidification effect of the mousse. You can use cold water or purified water, which can be drunk directly in the refrigerator and frozen for half an hour to make ice water.
5. After the gelatin sheet is softened, take it out and shake off the excess water, put it into the warm chocolate liquid, stir until it is mixed evenly. The temperature is about 40 degrees Celsius, the gelatin sheet is very easy to melt. When the hand feels like the glass bowl is close to the temperature, it's quite fast. Take it out and set aside, after mixing, you can start whipping cream.

6. Add fine sugar to the cream and whip. Use the cream from the refrigerator when using it to avoid letting it stand at room temperature for too long, which will affect the cream from being whipped. Whip until the cream appears with small patterns and disappears.

7. Divide the chocolate liquid and the whipped cream into two to three times, and stir evenly.

8. Pour the mixture into the mold, cover it with a lid or aluminum foil, and put it in the refrigerator to chill for 3 hours to solidify. You can also let it stand overnight, which is better for solidification.

9. After the chocolate mousse layer is solidified, squeeze some orange juice, put the orange juice in hot water and heat it to about 50 degrees Celsius, add fine sugar and stir to melt, then keep it warm over hot water.
10. Keep the orange juice warm, soften the gelatin sheet, after softening and absorbing water, put it into the orange juice and stir until it is mixed evenly. Then you can take it out of the pot and continue to stir, which will cool down faster. When the temperature reaches 30-40 degrees Celsius, the glass feels like the hand's temperature, it’s quite fast.

11. Then take out the solidified orange-flavored chocolate mousse, pour it into the orange juice, cover it with aluminum foil and put it in the refrigerator to solidify for 3 hours. Or let it stand overnight.

12. After the solidified orange-flavored chocolate mousse, tear off the bottom of the plastic film, use a hair dryer to blow the mold evenly for about 10 seconds, check if the mold can separate from the mousse, don’t blow for too long, the mousse will melt.
13. Decorate the mousse surface with small oranges and strawberry grains. Choose small and plump small oranges and cut them into a beautiful shape. The orange-flavored chocolate mousse is made perfectly delicious.
